Fast Beef Curry

Fast Beef Curry

Cook time: 15 mins
Serves: 2

Groundnut oil
Sirloin steak 1 x 350g, fat removed, sliced into thin strips
Thai red curry paste 2 tbsp
Green beans 150g, cut into 3cm pieces
Red pepper 1, sliced into thin strips
Tilda Rizazz brown basmati rice 1 pack
Roasted peanuts 50g, crushed (optional)

Heat 1 tbsp oil in a wok or large frying pan to smoking hot. Add the steak and cook for a minute, turning to seal and lightly brown. Turn the heat down to medium and add the curry paste. Stir well and add 2-3 tbsp water. Add the beans and red pepper and cook for 5-6 minutes. Add a little more water if you prefer more sauce and serve with the brown basmati rice and the peanuts sprinkled over.

Recipe extra: This also works well with pork. It’s quite spicy so you might like to add a little coconut milk instead of the water.
